LE UN

Restaurant specializing in locally-sourced ingredients

LE UN means "the one" in French. We decided on this name in the hopes that the time our guests spend with us is the best and irreplaceable. At LE UN, our goal is to serve the most delicious local ingredients available, crafted into delightful dishes that tell the story of the region and the building with a "local production for local consumption" ethos. We refuse to be bound by traditional notions of French or Japanese cooking, instead letting the distinctive character of each cuisine speak through our innovative and unique offerings.

LE UN KOBE GEIHINKAN Former Guest House

The Kobe Geihinkan LE UN is the original location and flagship restaurant of VMG Hotels and Unique Venues. On vast site of nearly 10,000 square meters, it has everything from a glorious Taisho Secession-style building (designated by the prefecture as an Important Cultural Property) to an expansive Japanese garden featuring a teahouse. The former residence of Ruizo Nishio was a favorite of the nobles, merchants, intellectuals of the day. Le Un offers sophisticated, innovative fusion fare that combines Japanese and Western elements. Treat yourself to premium Japanese-style hospitality in this unforgettable setting.

Kyoto | Kiyamachi

LE UN FUNATSURU KYOTO KAMOGAWA RESORT

Funatsuru is a traditional Japanese inn and restaurant that opened its doors in 1870 and has been perfecting its craft for over 150 years. It is housed in a 1922 building that has been nationally designated as a tangible cultural property. Though it exudes the energy of the modern world and its design has been refreshed over the years, it still retains an indefinable air of days gone by. Summer brings kawayuka riverside dining (June through September), a hallmark of the season in Kyoto. Dishes feature local Kyoto ingredients--including the area’s famed kyoyasai vegetables--and guests can enjoy them while watching the Kamogawa river flow by against the silhouette of Mt. Higashiyama. The experience is a delight in every season.

Kyoto | Higashiyama

LE UN AKAGANE RESORT KYOTO HIGASHIYAMA 1925

This restaurant is located in the renovated former residence of a longstanding copperworking manufacturer that was originally built in 1925. Dining is available in the main building, afternoon tea in the detached wing, and Japanese tea in the old storehouse, now used as a salon. Copper is used throughout, including in the roof and rain gutters, with the passage of time evident in the lovely greening of the metal. Enjoy cuisine driven by locally-sourced ingredients in this charming, tucked-away location so secluded you’ll hardly believe you’re in the heart of a major tourist area.

Chiba | Sawara

LE UN NIPPONIA Sawara Merchant Town Hotel

Surrounded by the sea on three sides, Chiba Prefecture is blessed with vast, fertile tracts of farmland that make it the third-largest agricultural producer in Japan and sixth in terms of its ocean catch. The GEISHO compound that houses the LE UN NIPPONIA Sawara Merchant Town Hotel was once the Nakamuraya Shoten merchant shop, designated a cultural property by Chiba Prefecture. The restaurant’s concept, Terroir et Nature, means “local and natural” in French, and the restaurant offers innovative cuisine designed to showcase the best that the area’s fresh local ingredients have to offer. Enjoy a leisurely meal highlighted by the seasonal flavors of Northern Chiba’s brand-name fare.

LE UN Auberge Toyooka 1925

LE UN Auberge Toyooka is located just a five-minute walk from Toyooka Station in an area close to Kinosaki. The area is known across Japan for its bountiful Japan Sea catch and its cornucopia of name-brand specialty products, from Tajima wagyu beef to Kasumi crab and Konotori rice. The restaurant serves nouvelle cuisine featuring fresh twists on traditional dishes and the finest ingredients born of this rich and fertile landscape. It is an auberge-style restaurant offering accommodations for guest enjoyment as well. The retro 1930’s building also adds an unforgettable air of midcentury nostalgia and is nationally designated as a tangible cultural property.

Hyogo | Asago

LE UN EN Takeda Castle Town Hotel

Built the refurbished fermentation cellar of a longstanding sake brewer nearly four centuries old, this is a space overflowing with history. Thick beams, countless pillars, browned earthen walls, Tamba-style dirt floors all hint at the backbreaking effort to protect the koji malts that are the heart and soul of sake-brewing from wind and snow and cultivate them. The dishes here are made from vegetables grown by local farmers committed to organic methods free of agricultural chemicals as well as other premium ingredients carefully selected from the Tajima, Tamba, and Tango areas. Delight in these fresh expressions of premium local specialty products sourced with a commitment to local production for local consumption.

LE UN NIPPONIA Sasayama Castle Town Hotel

Tamba-Sasayama is renowned across Japan for its many specialty products, which it has grown since ancient times. Tamba black soybeans are among the most famous, as are Tamba matsutake mushrooms--which are widely celebrated for their aromatic quality and springy texture. There are also the wild boar that live off the rich bounty of the Tamba-Sasayama forests and Tajima wagyu, a brand-name beef known for its exquisite texture. Located in the castle town of Sasayama, this restaurant offers innovative cuisine driven by premium brand-name ingredients from Tamba, Tajima, and Hyogo and powered by the rich vitality of nature.

LE UN NIPPONIA HOTEL NARA NARAMACHI

This restaurant is all about Japanese sake, in line with the “sake hotel” concept of LE UN NIPPONIA HOTEL Nara Naramachi. Located in Naramachi, close to the central district of Nara, the building was once the sake storehouse and residence of Toyosawa Shuzo. What was once an earthen floor area has now been renovated into a counter-style restaurant that serves fresh-pressed sake direct from the Toyosawa Shuzo brewery as well as limited bottlings available nowhere else. Take the time to savor these delicious offerings along with delectable cuisine for new flavor pairing experiences.

Hiroshima | Takehara

LE UN NIPPONIA HOTEL Takehara Saltworks Town

The town of Takehara was the home of a bustling salt industry in the Meiji era and is now a preservation district for traditional architecture that retains its beautiful period look--to the point that visiting here feels like stepping back in time into another world. The area also had a prosperous sake-brewing industry. The hotel and restaurant here echo this history with a “sake hotel” theme, with delightful cuisine that showcases sake, salt, and other abundant flavors of the region, including Seto Inland Sea seafood and citrus.

Mie | Iga

LE UN NIPPONIA HOTEL Iga Ueno Castle Town Hotel

Surrounded by the mountains of the Ueno Basin, Iga is a land where many gastronomic ingredients are produced due to the climate with severe temperature differences and the rich soil and water that nurture Iga ware, which is said to be the art of soil and flame. Ingredients such as Iga beef, Iga rice, and Iga sake are rarely found outside the region, and only those that can be eaten without visiting this area. This restaurant is a luxurious former inn that has been preserved since the Edo period and is registered as a tangible cultural property. Listen to the voices of those ingredients and enjoy the charm with all five senses.

Ehime | Ozu

LE UN NIPPONIA HOTEL Ozu Castle Town Hotel

Located at the territory of Ozu Castle, this restaurant is in a special location with a view of the main enclosure of Ozu Castle and the castle tower. With "Tobe ware", Iyo's proud ingredients such as seafood from the Seto Inland Sea, mountains from the rich nature, and the pure Hijikawa river from there. You can enjoy the ingredients made in the area with the vessels made from the soil of the area. Put the skill of a potter who inherited the tradition from Edo and the chef's spirit to bring out the best taste by listening to the voice of the ingredients in one plate.

Fukuoka | Dazaifu

LE UN HOTEL CULTIA Dazaifu

Adjacent to Dazaifu Tenmangu Shrine, which enshrines Sugawara no Michizane, the god of learning, this restaurant was the residence of the Yoshitsugu family, who was active as a painter for three generations from the end of the Edo period to the beginning of the Showa period. A variety of special products delivered from all over Kyushu, where the abundant fishing grounds such as the Genkai Sea and the agricultural and livestock industries are active. Fukuoka is a treasure trove of gastronomy, where ingredients from all over Kyushu are gathered while producing high-quality ingredients. Please enjoy the sophisticated dishes produced from the abundant ingredients.

LE UN NIPPONIA HOTEL Yame-fukushima merchant town

Yame, known nationwide as a tea-producing region, is an old sake brewery with a history of about 200 years, located in the town of the white walls of the important traditional buildings preservation district. With the theme of "TEA HOTEL", you can experience the charm of Japanese tea. At our restaurant, we extract and use the umami that is so rich that it can be described as soup stock, and pursue its potential as an ingredient. Please enjoy the dishes made from the rich natural blessings of the mountain river where tea leaves are born and the Ariake Sea.

Osaka | Osaka Castle

Osaka Gehinkan

Dignitaries from the Asia-Pacific nations visited this state guesthouse when the APEC ‘95 international conference was held in Osaka that November. The Osaka Geihinkan was constructed in the modern age to welcome special guests to the city. Modeled after Nijo-jo Castle in Kyoto (a World Heritage site), it features clean, traditional Japanese architecture for a space that reflects the country’s finest sensibilities through and through. It was even the site of the government banquet held during the G20 Osaka Summit 2019. A vast open area adjacent to the building is home to some three hundred Yoshino cherry trees. Every season offers unique delights here, from the spring azaleas and vibrant fall leaves to the kantsubaki camellias in winter.

KOBE KITANO IJINKAN Former Rein House

Kobe is a gorgeous city surrounded by mountains and the sea, but its Kitano district has its own special charm. Its beauty once attracted a European settler who built Reintei in the hopes of capturing the spirit of home. The restaurant serves solidly traditional French dishes unswayed by modern trends, driven by a local production for local consumption ethos. Chefs carefully select the finest ingredients by hand and showcase them in painstakingly prepared dishes. The white-walled European architecture is a favorite of important guests to the city, and the cuisine here is elevated to the same high standard.
